Ingredients

250 g mutton mince
2 cups water
8 -10 whole black peppercorns
1 teaspoon salt
6 -7 cloves
2 -3 whole black cardamom pods
2 teaspoons chopped green chilies , divided
10 -12 curry leaves
1 tablespoon oil
1 1/2 onions , chopped
1 teaspoon fresh ginger , chopped
1 teaspoon garlic , chopped
1/2 teaspoon turmeric powder
2 eggs , beaten
1/2 teaspoon salt
1 teaspoon mint leaf , chopped
1 teaspoon fresh coriander leaves , chopped
1 teaspoon fried almonds , to garish
1 teaspoon fried cashews , to garnish
Dhoop Chhaon(Sun n' Shade) Kheema is a popular minced meat recipe from the northern region of India. The name of the dish comes from the fact that it is cooked in the open sunlight and shade, giving it a unique taste and aroma. Instructions

1.In a large pan, add mutton mince, water, black peppercorns, salt, cloves, black cardamom pods, and half of chopped green chilies. Cook until water has evaporated and meat is tender. Remove from heat and keep aside.
2.In a separate pan, heat oil and add chopped onions, ginger, garlic, remaining chopped green chilies, curry leaves, turmeric powder, and salt. Fry until the onions turn golden brown.
3.Add the cooked mutton mince to the pan and mix well. Cook for another 5-7 minutes.
4.Add beaten eggs to the pan and mix well. Keep stirring until the eggs are cooked.
5.Garnish with chopped mint leaves, coriander leaves, fried almonds, and cashews. Serve hot with rice or naan.
