10 ounces basmati rice
2 3/4 cups chicken broth , hot
7 ounces frozen mixed green vegetables
2 tablespoons chopped fresh flat leaf parsley

Instructions

1.Preheat oven to 375°F (190°C).

3.Add the onion to the same skillet and cook for 2 minutes until soft. Add the garlic, garam masala, ginger, and green chili pepper and cook for 1 minute.
4.Add the rice to the skillet and stir until coated in the onion mixture.
5.Pour in the hot chicken broth and stir to combine. Add the mixed vegetables and flat leaf parsley and mix well.
6.Pour the rice mixture over the chicken in the ovenproof dish and cover with foil. Bake in the preheated oven for 45 minutes or until the rice is tender and has absorbed all the liquid.
