Ingredients

225 g white basmati rice
40 g butter
2 onions , sliced into rings
1 clove garlic , crushed
2 bay leaves
2 cloves
2 green cardamom pods
2 cinnamon sticks
1 teaspoon cumin seed
2 1/2 cups boiling water
4 smoked trout fillets , skinned
50 g slivered almonds , toasted
50 g seedless raisins
2 tablespoons chopped fresh parsley
mango chutney , to serve
pappadams , to serve
Smoked Trout Pilaff is a delicious and nutritious recipe that originates from the Middle East and South Asia where rice is a staple food. Instructions

1.Rinse the rice in cold water for a few times until the water runs clear.
2.In a large pot, melt the butter over low heat, then add the onions and garlic to it, and cook until softened.
3.Add bay leaves, cloves, green cardamom pods, cinnamon sticks, and cumin seeds to the pot and cook for a minute.
4.Stir in the rice and gently fold all the spices and onions through it.
5.Add the boiling water and season with salt to taste.
6.Cover the pot with a lid, reduce heat to low, and cook for about 18 minutes until the rice absorbs all the water and is tender.
7.Meanwhile, flake smoked trout fillets into bite-sized pieces and sauté in a pan with a little butter for few minutes until fragrant.
8.Stir in toasted almonds, raisins, fresh parsley, and smoked trout into the cooked rice mixture.
9.Serve the pilaff with mango chutney and papadams on the side.
