Ingredients

2 tablespoons grapeseed oil
1 red onion , finely chopped
1 tablespoon garlic , grated
1 tablespoon ginger , grated
1/4 cup tandoori paste
1 lb chicken breast ( boneless , skinless , cut into bite-sized pieces )
1/2 cup yogurt , low-fat plain
6 large whole wheat tortillas
3/4 cup mozzarella cheese , grated
Tandoori Quesadillas are a fusion recipe that combines the flavors of traditional Indian tandoori chicken with the popular Mexican quesadilla. This recipe makes for a perfect dinner dish that is full of flavor and spice. The chicken is marinated in tandoori paste and mixed with low-fat plain yogurt to create a delicious and creamy filling. Instructions

1.Heat up the grapeseed oil in a frying pan over medium heat.
2.Add the finely chopped red onion and cook until caramelized.
3.Add the grated garlic and ginger and cook for an additional 2 to 3 minutes.
4.Add the tandoori paste and cook for a minute until the aroma is released.
5.Add the chicken breast pieces to the pan, and cook until golden brown, about 7-8 minutes.
6.Remove the pan from the heat and let the chicken cool slightly.
7.In a separate bowl, mix together the low-fat plain yogurt with the chicken and stir until the chicken is coated in yogurt.
8.Place a whole wheat tortilla on a flat surface. Sprinkle with grated mozzarella and top with the chicken mixture. Fold the tortilla over to form a half-moon.
9.Heat up a non-stick pan over medium heat. Place the tortilla in the pan and cook for about 2 to 3 minutes on each side until golden brown. Repeat for the remaining tortillas and chicken mixture.
