Ingredients

1 cup boiled toor dal ( yellow lentils )
4 cups water
20 fresh curry leaves , washed and torn
1 medium tomatoes , peeled and chopped
1/8 teaspoon turmeric powder
1 tablespoon jaggery , grated
1 teaspoon oil
1 tablespoon oil
1 teaspoon mustard seeds
1 pinch salt
2 teaspoons salt
1/2 teaspoon ajwain
water , to knead
1 cup fresh mixed vegetables , chopped ( I use carrots and celery )
1 lemon , juice of
5 tablespoons fresh coriander leaves , for garnishing
1/4 teaspoon red chili powder
1/4 teaspoon garam masala powder
1 whole red chile
1 pinch asafoetida powder
1 cup whole wheat flour
1 tablespoon grated coconut , to garnish ( optional )

Instructions

1.In a mixing bowl, combine the whole wheat flour, salt, ajwain and oil. Knead into a stiff dough, adding water as required. Cover and set aside.
2.Cook the boiled toor dal with curry leaves, chopped tomatoes, turmeric powder, garam masala and red chili powder.
3.In a hot pan, heat oil and add mustard seeds until they crackle. Add asafoetida powder and pour this tempering over the boiled dal. Stir well and set aside.
4.In a separate mixing bowl, combine the fresh mixed vegetables and lemon juice.
5.Preheat oven to 180 degrees Celsius.
6.Divide the dough into small portions and roll out into small circles. Place a spoonful of dal in the center and spoon some mixed vegetables on top. Bring the edges of the circle together and pinch to form a potli. Repeat with remaining dough and filling.
7.Arrange the dal potlis on a baking tray and brush with oil. Bake for 20-25 minutes, or until golden brown. Serve hot with grated coconut and fresh coriander leaves.
