Ingredients

1 cup amaranth seeds ( chaulai )
2 cups water
1 tablespoon oil
3 garlic cloves , finely minced
1 onion , finely chopped ( easy chopping in a Ninja or food processor )
1/2 cup finely chopped zucchini ( easy chopping in a Ninja or food processor )
1/2 cup finely chopped red bell pepper ( easy chopping in a Ninja or food processor )
sea salt , to taste
1/4 tablespoon chili powder
1 pinch amchoor powder ( mango powder )
1 tablespoon garam masala
1/2 teaspoon ground coriander
1/2 teaspoon lemon zest
fresh ground black pepper
2 tablespoons oil , to pan fry
amaranth flour or breadcrumbs , for dusting
2 tablespoons vegetable oil

Instructions

1.Rinse the amaranth seeds and drain well.
2.Bring 2 cups of water to a boil and add the amaranth seeds.
3.Cover and cook for 20-25 minutes until the seeds are tender.
4.Remove from heat and let it cool down.
5.Meanwhile, heat oil in a pan and add garlic, onion, zucchini, and red bell pepper. Stir and cook for 5-7 minutes until soft.
6.Add salt, chili powder, amchoor powder, garam masala, ground coriander, lemon zest, and black pepper to the pan. Stir well to combine.
7.Take the pan off the heat and add the cooked amaranth seeds. Mix well.
8.Once cooled, form the mixture into patties. Dust them with amaranth flour or breadcrumbs.
9.Heat 2 tablespoons of oil in a pan and pan-fry the tikkis until golden brown on both sides.
10.Serve with your favorite chutney or dip.
