1 can suraj chickpeas , drained and rinsed
2 large tomatoes , chopped ( about 3 cups/750 mL )
1/2 cup chopped fresh coriander
1 tablespoon fresh lemon juice

Instructions

3.Add sweet potato and potato cubes and fry for 3-4 minutes until slightly browned.
4.Stir in chickpeas, chopped tomatoes, and enough water to cover the mixture evenly. Cover and simmer for 20-25 minutes until potatoes and chickpeas are tender.
5.Stir in coriander and lemon juice, cook for another 2-3 minutes and serve hot.
