Ingredients

1 cup uncooked basmati rice or 1 cup long-grain rice
1 teaspoon oil
1 bay leaf
1 clove
1 cinnamon stick
1/2 teaspoon cumin seed
1 medium onion , finely chopped
1 teaspoon ginger and green chili paste
1 cup bean sprouts ( or use a combination of your favourite sprouts )
1/4 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander seed , ground
salt
2 1/2 cups hot water
2 tablespoons chopped coriander

Instructions

1.Rinse the rice in water and soak it for 30 minutes. Drain the water and keep it aside.
2.Switch on the pressure cooker and add oil to it.
3.Add bay leaf, clove, cinnamon stick, and cumin seeds.
4.Add onions and sauté till it turns golden brown.
5.Add ginger and green chili paste and cook it for a minute.
6.Add bean sprouts and mix well.
7.Add turmeric powder, red chili powder, coriander seed, and salt. Mix well.
8.Add the soaked rice to the pressure cooker and sauté for 2-3 minutes.
9.Add hot water and chopped coriander.
10.Close the lid of the pressure cooker and pressure cook for 2 whistles on medium flame.
11.Turn off the flame and let the pressure release on its own. Open the lid and fluff up the pilaf with a fork.
