Ingredients

2 tablespoons fresh lemon juice
2 teaspoons finely minced garlic
2 teaspoons finely minced ginger
2 teaspoons coarse salt
2 lbs chicken thighs ( boneless , skinless , and cut into 1 1/2-inch chunks )
1 large beet , cooked , peeled , cooled and roughly chopped
3 cups whole milk yogurt
3 tablespoons dried fenugreek leaves
2 teaspoons garam masala
1 teaspoon ground cumin
2 tablespoons canola oil
2 tablespoons melted butter

Instructions

1.In a mixing bowl add lemon juice, ginger, garlic, salt and chicken chunks. Mix well to marinade.
2.In a blender, blend chopped beetroot till smooth.
3.In another mixing bowl add beetroot puree, yogurt, fenugreek leaves, garam masala, and ground cumin. Mix well to form a marinade.
4.Pour the beetroot marinade over the chicken. Mix well, refrigerate and let marinate for at least an hour.
5.Preheat oven to 400 F.
6.Grease a baking tray and place chicken chunks with the marinade on it.
7.Brush chicken with canola oil and bake for 20-25 minutes or until done.
8.Drizzle with melted butter and serve with lemon wedge.
