Ingredients

2 whole trout , gutted ( or fish of your choice )
2 tablespoons lemon juice
2 tablespoons tomato puree
1 tablespoon ground almonds
1 teaspoon minced ginger
1 teaspoon minced garlic
1 teaspoon Tabasco sauce
1 teaspoon garam masala
3 tablespoons plain low-fat yogurt
125 ml coconut milk
1 tablespoon chopped coriander leaves
2 tablespoons oil
1 small bay leaf
2 black cardamom pods ( optional )
1 inch cinnamon bark
1/2 teaspoon salt
flaked almonds
lemon wedge
fresh bay leaf

Instructions

1.Preheat the oven to 180°C and line a baking tray with baking paper.
2.In a small mixing bowl, combine the lemon juice, tomato puree, ground almonds, minced ginger, minced garlic, Tabasco sauce, and garam masala. Mix until well combined.
3.Cut a few diagonal slits into the trout on both sides and rub the lemon juice mixture all over the fish, making sure to get it into the slits. Set aside.
4.In a medium-sized saucepan, heat the oil over medium-high heat. Add the bay leaf, black cardamom pods, and cinnamon bark and fry for 30 seconds until fragrant. Add the coconut milk, plain yogurt, chopped coriander leaves and salt to the saucepan and mix to combine.
5.Place the trout on the lined baking tray, top with the coconut and almond sauce, and sprinkle with flaked almonds. Add a fresh bay leaf to the tray.
6.Bake the trout for 20-25 minutes or until the fish is cooked through and the sauce is browned on top. Serve with a lemon wedge and enjoy!
