Ingredients

3/4 cup whole green lentil ( whole green moong )
1 1/2 cups coconut , freshly grated or desiccated
1 -2 dried red chili
1/2 teaspoon turmeric powder
1/2 teaspoon fenugreek seeds
1 teaspoon tamarind pulp , soaked in
2 tablespoons water
1 tablespoon oil
1 tablespoon oil
1 teaspoon mustard seeds
5 -6 fresh curry leaves
1 whole red chilies or 1 onion , finely chopped and lightly fried ( optional )
Mooga Ambat is a traditional Indian curry that is popular in the southern part of India, especially in the state of Karnataka. Instructions

1.Rinse the whole green lentils and soak them for at least 8 hours or overnight. Then, drain the water from the soaked lentils, and keep aside.
2.In a pan, heat oil over medium-high heat. Add mustard seeds, dried red chili, and fresh curry leaves. Once the mustard seeds start popping, add fenugreek seeds, grated coconut, and turmeric powder. Mix well and sauté for a few minutes.
3.Add the soaked and drained lentils to the pan. Mix well and cook for 3-4 minutes. Then, add 2 cups of water, tamarind pulp, and salt. Mix well and cook with a lid on for 20-25 minutes over medium heat.
4.Once the lentils are cooked, turn off the heat and let it rest for 5 minutes. Serve the hot and delicious Mooga Ambat with rice.
