Ingredients

1/2 cup vegetable oil
3 medium onions , chopped fine
2 cloves garlic , chopped
1 ounce fresh ginger , chopped
3/4 lb boneless chicken
2 brown cardamom pods
4 whole cloves
14 whole black peppercorns
2 teaspoons dried coriander
1 teaspoon cumin seed
2 teaspoons white poppy seeds
2 teaspoons fresh lemon juice
1/2 teaspoon garam masala
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
2 teaspoons tomato paste
2 bay leaves
3/4 cup plain yogurt

Chicken Biryani is a famous Indian delicacy that originated in the kitchens of the Mughal emperors. It quickly became a popular dish throughout India and is now enjoyed all over the world. It is a flavorful and aromatic dish made with Basmati rice, spices, and chicken, combining layers of mouthwatering flavors and textures. Instructions

1.Heat 1/2 cup of vegetable oil in a pan over medium heat. Fry 2 onions until golden brown. Remove from the pan and set aside.
2.Add 1 chopped onion, garlic, and ginger to the remaining oil. Fry for 2-3 minutes.
3.Add 3/4 lb. boneless chicken and stir-fry until the chicken is cooked through.
4.Grind 2 brown cardamom pods, 4 whole cloves, 14 whole black peppercorns, 2 teaspoons of dried coriander, 1 teaspoon of cumin seed, and 2 teaspoons of white poppy seeds in a grinder.
5.Add the ground spice mixture to the pan. Stir for 1 minute.
6.Add 2 teaspoons of fresh lemon juice, 1/2 teaspoon of garam masala, 1/4 teaspoon of cayenne pepper, 1/2 teaspoon of salt, 2 teaspoons of tomato paste, and 2 bay leaves. Stir until well combined.
7.Add 3/4 cup of plain yogurt and stir for 2-3 minutes. Add fried onions and mix well.
8.Spread the chicken masala mixture in a pot. Add sliced tomatoes, a green pepper ring, and cilantro on top. Cover and cook on low heat for 20-25 minutes.
9.Meanwhile, boil 2 cups of basmati rice with 1/2 tsp of salt. Cook until the rice is 3/4 done. Drain and set aside.
10.Once the chicken masala is cooked, layer the rice on top of the chicken in the pot. Cover and cook on low heat for 10-12 minutes.
11.Fluff the rice and chicken mixture with a fork before serving.
