Instructions

1.In a pan, heat 3 teaspoons oil over medium heat.
2.Add ginger-garlic paste and sauté for 30 seconds.
3.Add 1 cup tomato puree, 2 teaspoons tamarind pulp, 1 teaspoon salt, 1 teaspoon red chili powder, 1 teaspoon coriander powder, and 1 teaspoon roasted cumin powder. Mix well and sauté for 2-3 minutes.
4.Add 1 cup water and mix well. Cover the pan and let it simmer for 5-6 minutes.
5.In another pan, heat 1 teaspoon oil over medium heat.
6.Add fenugreek seeds, nigella seeds, cumin seeds, mustard seeds, whole red chili, and curry leaves and sauté for 30 seconds.
7.Add the tomato mixture to this pan and mix well.
8.Add 3-4 eggs and cover the pan. Cook until the eggs are set.
9.Garnish with red chili powder, cumin powder, and chopped coriander leaves.
