Ingredients

1 roasting chickens
1 large onion
4 garlic cloves
1 inch fresh gingerroot
1 teaspoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon chili powder
2 teaspoons salt
1/2 cup yogurt
1 tablespoon yogurt
1 tablespoon vinegar
1 tablespoon Worcestershire sauce
2 lemons
2 tablespoons melted butter
1 teaspoon garam masala ( substitute allspice if it can not be found )

Instructions

1.Rinse the chicken under cold water and pat dry with paper towels. Cut deep slashes into the meaty parts of the chicken.
2.Peel and chop the onion, garlic, and gingerroot. Combine the chopped vegetables, coriander powder, cumin powder, chili powder, salt, and 1/2 cup of yogurt in a blender. Puree until smooth.
3.Mix the puree with the vinegar and Worcestershire sauce.
4.Juice the lemons and whisk the juice with the 1 tablespoon of yogurt.
5.Stir in the melted butter and garam masala or allspice.
6.Marinate the chicken in the yogurt marinade for at least 4 hours or overnight, turning occasionally to make sure the chicken is well-coated.
7.Preheat your grill to medium-high heat or preheat your oven to 425°F.
8.Grill or bake the chicken, turning occasionally, until the meat is cooked through and the skin is crispy and browned.
