Ingredients

1 kg chicken , cut into bite sized pieces
1/2 kg basmati rice , washed and soaked for half an hour in water
15 cloves garlic
2 inches fresh ginger
1 kg onion , peeled , washed and finely chopped
15 green chilies , washed
2 cups fresh mint leaves , finely chopped
1 teaspoon turmeric powder
1/2 cup milk
1/2 cup plain yogurt , beaten
4 tablespoons oil
1 tablespoon ghee , melted
2 tablespoons ghee
3 inches cinnamon
4 cloves
5 green cardamoms
15 cashews
15 raisins
water , as required
Mms Chicken Biryani is a classic Indian dish that hails from the royal courts of Nizamuddin in Hyderabad. Instructions

1.In a food processor, blend the garlic, ginger, green chilies, and mint leaves until it forms a smooth paste.
2.In a large casserole pot, heat oil and 2 tablespoons of ghee together. Add the cinnamon, cloves, and cardamoms. Stir until fragrant.
3.Add the onions and sauté until caramelized.
4.Add the chicken and turn up the heat. Stir frequently until the chicken is golden brown.
5.Add the garlic paste, turmeric, and salt to the pot. Continue cooking to let the spices release their fragrance.
6.Add water and stir. Let the pot simmer on low heat until the chicken is fully cooked.
7.In another large pot, cook the basmati rice in boiling salted water, until half done. Drain.
8.In a small bowl, mix together the milk and beaten yogurt. Set aside.
9.In a separate pan, fry the cashews and raisins in remaining ghee.
10.Layer the pot with the rice, chicken, and fried cashews and raisins. Add in the milk and yogurt mixture. Cover with a tight-fitting lid and simmer over low heat for around 30 minutes.
