Ingredients

100 g black channa , washed and soaked in plenty of water , overnight ( black chickpeas , NOT white chickpeas )
2 tablespoons pure wesson canola oil
1/4 teaspoon asafoetida powder
1/4 teaspoon ground fenugreek
1/2 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
salt
1 tablespoon gram flour
1/2 cup tamarind juice
2 1/2 - 3 cups water
1 tablespoon mango powder ( amchur )
Khatta Channa is a classic Punjabi dish that is enjoyed all over India as a popular street food and home-cooked meal. Instructions

1.Drain the soaked chickpeas and rinse with fresh water.
2.Heat oil in a pot, add asafoetida powder and ground fenugreek, and stir for a few seconds.
3.Add coriander powder, turmeric powder, red chili powder, and salt.
4.Stir well and add the chickpeas. Mix everything together.
5.Add gram flour and stir until the chickpeas are well-coated.
6.Add tamarind juice, mango powder, and water. Mix well.
7.Bring everything to a boil and then reduce the heat to low.
8.Cover the pot and let the chickpeas cook for about 40-45 minutes or until tender. Stir occasionally.
9.Check the seasoning and adjust the salt and spices as needed.
10.Serve hot with rice, roti, or naan.
