Instructions

1.Preheat the oven to 350 degrees Fahrenheit, and spray two 9-inch round cake pans with Pam cooking spray.
2.In a large bowl, whisk together the melted butter, white vinegar, vanilla, and lukewarm water until combined.
3.In a separate bowl, sift together the flour, sugar, cocoa powder, curry powder, baking soda, and salt.
4.Slowly add the dry ingredients into the wet ingredients, whisking until the batter is smooth.
5.Pour the batter evenly between the two cake pans and bake for 30-35 minutes, or until a toothpick comes out clean when inserted into the center of each cake.

13.Place the semisweet chocolate pieces and vanilla in a large heatproof bowl and pour the hot cream mixture over the top.
14.Let the chocolate mixture sit for 2-3 minutes before whisking together until smooth and glossy.
15.On a cake plate or serving dish, place one cake layer and spread a thin layer of chocolate ganache over the top.
16.Add a generous layer of the mango filling on top of the chocolate ganache and then place the second cake layer on top.
17.Repeat the layering process with the remaining cake layers, alternating between chocolate ganache and mango filling.
18.Once all the cake layers and filling have been used, spread a thin layer of chocolate ganache over the top and sides of the cake to create a crumb coat.
19.Chill the cake in the refrigerator for 30-60 minutes before spreading a final layer of chocolate ganache over the top and sides of the cake.
20.Refrigerate the cake for at least 1 hour before serving and enjoy!
