2 teaspoons cumin seeds
2 garlic cloves , crushed

1 1/4 lbs potatoes , cut into thick matchsticks and boiled until soft
1/2 cup hot water
1 zucchini , cut into thick matchsticks and boiled
2 plum tomatoes , finely chopped
1/2 teaspoon garam masala
1/4 cup fresh cilantro , chopped
2 tablespoons fresh mint leaves , chopped
1 lime , juice and finely grated zest

Instructions

1.In a large pan, heat sunflower oil and saute chopped onions for a few minutes until they turn translucent.
2.Add cumin seeds, crushed garlic cloves, grated ginger, and turmeric to the pan and saute for a minute or until fragrant.
3.Add boiled potatoes to the pan and stir well until coated in the onion and spice mixture.
4.Add half a cup of hot water to the pan and stir well. Cover and cook over a low flame for 5-7 minutes.
5.Add boiled zucchini and chopped plum tomatoes to the pan and stir well. Cover and cook for another 5 minutes or until the vegetables are well cooked and flavourful.
6.Add garam masala, chopped cilantro, chopped mint leaves, and lime juice and zest to the pan and stir well. Adjust the salt to taste.
7.Serve hot and enjoy!
