Ingredients

8 small baby potatoes
1 tablespoon raisins
1 tablespoon cashews , powdered coarsely
1 tablespoon cream
100 g panir

3 tomatoes , pureed & strained
1 capsicum , finely chopped
1 onion , chopped in strips

1/2 teaspoon turmeric powder
1 teaspoon red chili powder

2 tablespoons mustard oil ( or other )
4 tablespoons low-fat yogurt

1 inch piece gingerroot
4 -5 red kashmiri chilies
8 -10 mint leaves

Instructions

1.Rinse the baby potatoes and prick them with a fork several times.

4.Add pureed tomatoes and spices to the pan. Cook for a few minutes before adding the capsicum and salt.
5.Add water and the baby potatoes to the pan, cover with a lid and simmer for 15-20 minutes until the potatoes are cooked.
6.In a separate pan, heat the mustard oil and add finely chopped onions, grated gingerroot, and cashew powder. Fry until the onions turn golden brown, and then add red chili powder, turmeric powder, and salt.
7.Add the fried onion mixture and cream to the potato pan. Mix well and cook for a few more minutes before adding chopped coriander.
8.Serve hot with low-fat yogurt and mint leaves.
