2 cups hot cooked basmati rice
1/4 cup thinly sliced green onion

Instructions

1.Season the chicken with 1/4 teaspoon of salt.
2.Heat 1/2 tablespoon of oil in a skillet over medium-high heat. Add chicken and cook for 5 minutes or until browned on both sides. Remove chicken from pan.
3.Heat the remaining 1/2 tablespoon of oil in the same skillet. Add onion, red bell pepper, ginger, curry powder, coriander, and garlic. Cook for 5 minutes or until vegetables are tender.
4.In a bowl, mix chicken broth, cornstarch, and remaining 1/4 teaspoon of salt. Add broth mixture to the skillet and bring to a boil. Cook for 1 minute or until sauce thickens.
5.Add mango to the skillet and cook for 2 minutes or until heated through.
6.Return chicken to the skillet and cook for 5 minutes or until chicken is cooked through.
7.Serve with hot cooked basmati rice and garnish with green onions.
