Ingredients

5 medium brinjal
1 cup dried coconut , grated
1 cup sesame seeds
1 cup peanuts
1/2 cup cumin seed
1/2 cup fresh coriander seed
3 medium onions
2 teaspoons red chili powder
1 teaspoon turmeric powder
1 tablespoon ginger-garlic paste
2 cups tamarind paste
salt
1 teaspoon cumin seed
1/2 teaspoon fenugreek seeds
5 dried red chilies
1 teaspoon mustard seeds
5 -10 curry leaves
1/2 cup oil
Hyderabadi Bagare Baingan is a simple and flavorful eggplant curry that hails from the city of Hyderabad in India. This dish is made by stuffing eggplants with a mixture of coconut, peanuts, and spices and cooking them in a spicy tamarind-based sauce. Traditionally, this dish is served with rice or Indian breads such as naan or roti. Instructions

1.Wash the brinjals and cut off the top stem.
2.Make 2-3 slits vertically on each brinjal without cutting it into 2 halves. Keep aside.
3.In a mixie or blender add grated coconut, sesame seeds, peanuts, cumin seed, fresh coriander seed, and onions. Make a smooth paste without adding water.
4.In a pan, heat oil and add mustard seeds, cumin seeds, fenugreek seeds, dried red chilies, and curry leaves. Wait until it splutters and becomes fragrant
5.Add ginger-garlic paste and sauté for a few seconds.
6.Add the smooth paste from step 3, red chili powder, turmeric powder, and salt. Mix well, cover, and cook for 15-20 mins on medium heat.
7.Add tamarind paste, and cook for another 10-15 mins or until the oil separates and floats on top of the paste.
8.With a spoon gently stuff the masala paste evenly into the slits of each brinjal. Place the brinjals along with the remaining masala paste into the pot.
9.Add 2-3 cups of water to the pot. Let it cook for 25-30 mins on medium heat or until the brinjals are cooked.
10.Serve hot with naan, roti, or steamed rice.
