500 g leg of lamb , boneless , cut into 2 1/2 cm cubes
1 teaspoon chickpea flour
20 g garlic paste
20 g ginger paste
6 green chilies , finely chopped
2 tablespoons lime juice
1 teaspoon sugar
6 tablespoons yogurt
1 tablespoon mustard oil
2 tablespoons coriander leaves , finely chopped

2 1/2 cm cinnamon sticks
4 black cardamom pods , crushed
4 green cardamom pods , lightly crushed
8 cloves
1 tablespoon coriander seed
1 teaspoon black peppercorns
1 tablespoon cumin
1/2 teaspoon fenugreek seeds
1 tablespoon dried fenugreek leaves
1 teaspoon red chili powder
1/2 teaspoon ground mace
6 tablespoons ghee
250 g onions , finely chopped
1 teaspoon sugar
500 ml lamb stock
salt
1 teaspoon garam masala powder

Instructions

1.In a mixing bowl, add the leg of lamb and sprinkle chickpea flour, garlic paste, ginger paste, chopped green chilies, lime juice, sugar, yogurt, mustard oil, finely chopped coriander leaves and salt. Mix well and keep aside to marinate.
2.In a pestle and mortar or a separate grinder, add cinnamon sticks, black cardamom pods, green cardamom pods, cloves, coriander seed, black peppercorns, cumin, fenugreek seeds, dried fenugreek leaves, red chili powder and ground mace. Grind to a fine powder and keep aside.
3.Heat ghee in a pan and add finely chopped onions and sugar. Cook till the onions turn golden brown.
4.Add the powdered spices to the pan and stir for a minute.
5.Add the marinated lamb to the pan and cook till the meat is tender and dry.
6.Add the lamb stock, salt and garam masala powder to the pan and simmer for 10-15 minutes till everything is cooked through.
7.Serve hot and garnish with fried onions.
