Ingredients

1 large carrot , diced

1 teaspoon garam masala powder

3 tablespoons oil
water , as required
2 -3 sprigs fresh coriander leaves , washed and chopped
1 medium carrot , washed , peeled and finely chopped
1 medium onion , finely chopped
4 garlic cloves
1/2 inch piece gingerroot , chopped
4 teaspoons coriander seeds
1 teaspoon black peppercorns
1 inch cinnamon stick
6 cloves
4 red chilies
1/4 cup shredded coconut

Instructions

1.In a blender, grind together the garlic, gingerroot, coriander seeds, black peppercorns, cinnamon stick, cloves, and red chilies to make a smooth paste.

3.Add the ground paste to the pan and sauté for 5 minutes until fragrant, adding water if necessary.
4.Add the finely chopped carrot and cook for a few minutes until tender.
5.Add the diced potato, boiled cauliflower, and capsicum to the pan along with some salt and cook for 10 minutes.
6.Stir in the boiled green peas and garam masala powder and cook for an additional 5 minutes.
7.Garnish with fresh coriander leaves and serve hot with rice or chapati.
