1/3 cup water
2 lbs pork , cut into 1-inch cubes
1 ginger cube , 1 inch cubed , chopped
8 garlic cloves , peeled
1 tablespoon coriander seed , ground
1/2 teaspoon turmeric

Instructions

1.In a dry pan, roast the cumin seeds, peppercorns, and mustard seeds for about 20 seconds over medium heat or until they begin to release their aromas.

3.Remove from the heat and place the mixture in a blender with 2 tablespoons of vinegar, salt, and brown sugar. Blend until smooth.
4.In a large pan, heat vegetable oil over medium heat. Add onions and sauté until they become translucent.
5.Add the pork, ginger, garlic, coriander, turmeric, and the remaining vinegar. Cook until pork is browned and almost cooked through.
6.Add the spice paste from the blender, water, and simmer until the pork is fully cooked.
7.Garnish with cilantro, if desired.
