Ingredients

1 cup long-grain basmati rice , cleaned and washed
2 teaspoons tamarind juice
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seed
2 red chilies
1 bay leaf ( optional )
1/4 teaspoon jaggery ( optional )
1/4 teaspoon turmeric powder
4 stalks of fresh curry leaves , washed and torn
1 tablespoon oil
1 tablespoon plain peanuts , broken
1 teaspoon salt
3 cups water

Instructions

1.In a pot, bring the water and rice to a boil, then reduce the heat and let it simmer, covered, for about 15 minutes or until the rice is cooked.
2.In a separate pan, heat up the oil until hot, and then add the mustard seeds, cumin seeds, red chilies, and bay leaf.
3.Once the mustard seeds start popping, add the fresh curry leaves and peanuts, and fry them for a minute.
4.Add in the tamarind juice, salt, jaggery, and turmeric powder, and stir well.
5.When the rice is cooked, transfer it to the pan with the tamarind mixture, and mix until all the grains are coated.
6.Serve hot or cold!
