Ingredients

6 cups whole milk
3/4 cup basmati rice
1 cup cream or 1 cup half-and-half
3 egg yolks
3 teaspoons vanilla or 1 vanilla bean
1/2 cup sugar or 1/2 cup Splenda sugar substitute
6 allspice berries
6 whole cloves
1/2 teaspoon fresh ground nutmeg
1 cinnamon stick
6 green cardamom pods

Instructions

1.Rinse the rice several times until the water runs clear.
2.Boil 4 cups of milk in a pan and add rice to it. Let it cook on low flame for 30-40 minutes or until the rice is cooked and the milk has reduced to half the quantity.
3.Mix egg yolks, sugar, vanilla extract or bean, nutmeg, allspice berries, cloves, cinnamon stick, and green cardamom pods in a bowl.
4.Add the remaining 2 cups of milk and cream or half-and-half to the rice mixture and let it warm up again.
5.Cook on medium heat until it reaches a simmer, stirring frequently so the mixture doesn't stick to the bottom.
6.Now add the egg and sugar mixture into the rice and milk mixture, continuing to stir for another 5 minutes until it thickens.
7.Remove from heat and pour into individual bowls, letting it cool to room temperature.
8.Garnish with your preferred toppings such as nuts or fruit and serve!
