Ingredients

1/4 teaspoon saffron thread
1 1/4 cups boiling water , divided
4 cups water
2 cups basmati rice , rinsed ( any long-grain rice may be used )
2 teaspoons salt , divided
1/4 cup ghee ( or butter )
20 whole cashews ( unsalted )
1 tablespoon fresh ginger , finely chopped
1 teaspoon black mustard seeds
1 whole clove
1 tablespoon fresh green chili pepper , finely chopped
3 tablespoons fresh coriander , finely chopped ( cilantro )
1/2 cup fresh lime juice
1/4 cup freshly grated coconut
Nimbu Ka Chaval is a popular dish from India. It is a fragrant and flavorful rice dish that is cooked with saffron, lime juice, and spices. Instructions

1.In a small bowl, combine saffron and boiling water, let it sit for 10 minutes.
2.In a large pot, bring 4 cups of water to a boil, add the rice and 1 teaspoon salt and stir.
3.Lower the heat and let the rice simmer until the water is absorbed, about 13-15 minutes.
4.In a large pan, heat ghee or butter over medium heat. Add cashews and cook until golden brown. Remove the cashews and keep them aside.
5.Add ginger, mustard seeds, clove, green chili pepper, and coriander to the same pan and stir until the seeds start to pop.
6.Coat the rice with the spice mixture, stir in the saffron water and lime juice.
7.Add the grated coconut and the remaining teaspoon of salt. Stir gently to mix.
8.Serve hot with the cashews on top.
