2 ounces butter
2 cups basmati rice
5 cups water
1 chicken stock cube
1 teaspoon salt
1/4 cup sliced almonds
1 pomegranate

Instructions

1.Rinse the rice in cold water for at least 3 times. Drain excess water and keep aside.
2.In a saucepan, melt butter and add sliced almonds, sauté for 2 minutes and keep aside.
3.Add water, chicken stock cube and salt to a large pot and bring to the boil.
4.Add rice, stir and reduce heat to low. Cover the pot with a tight-fitting lid and let it simmer for about 18-20 minutes.
5.After the rice is cooked, let it stand for 5 minutes. Then, fluff the cooked rice with a fork gently.
6.Cut the pomegranate in half and remove the seeds. Sprinkle the pomegranate seeds and almond butter mixture over the cooked rice. Serve and enjoy!
