3 carrots , cut in small cubes
3 potatoes , cut in small cubes
1/2 cup peas

1 large onion , chopped
2 tomatoes , chopped
1 cup tomato sauce
finely chopped fresh parsley , to taste
1 pinch basil
1 bay leaf

2 tablespoons light soy sauce
1/4 cup vegetable oil
salt and pepper
6 eggs , fried sunny-side-up
4 large plantains , each sliced diagonally into 3 , fried

Instructions

1.In a large pan over medium heat, sauté onions and garlic in olive oil.

3.While the beef mixture is cooking, preheat vegetable oil in a separate pan over medium-high heat. Fry the potatoes and carrots for about 7 minutes then add the peas and fry for another 2-3 minutes.
4.Season the vegetables with salt and pepper to taste and set aside. In the same pan, fry the plantains until golden brown, about 3 minutes per side.
5.Serve the beef mixture over a bed of rice, garnished with fresh parsley, and a serving of the vegetables and fried plantains on the side. Top everything with a sunny-side-up egg.
