Ingredients

1 1/2 cups dried mung beans
1 - 1 1/2 cup onion , finely chopped
2 tablespoons vegetable oil
1/2 teaspoon salt
2 tablespoons fresh gingerroot , peeled and finely minced
1 -2 small fresh chili pepper , minced
5 -6 garlic cloves , minced
14 ounces coconut milk
1 tablespoon soy sauce
2 cups finely chopped chard leaves
Known locally as Ginataang Munggo, Philippine Mung beans in Coconut Milk is a traditional comfort dish that has been enjoyed by Filipinos for generations. The creamy texture and mild heat from the chili pepper make for a delicious and filling meal that pairs well with steamed rice. Instructions

1.Rinse the dried mung beans in cold water until it runs clear.
2.In a large, deep pot, bring 4 cups of water to a boil.
3.Add the mung beans and let it boil for 10 minutes, then reduce heat to low and let simmer for another 15 minutes.
4.In another pan, heat up the vegetable oil over medium heat.
5.Add the onion, ginger, chili pepper and garlic to the pan. Cook until the onion has softened.
6.Add the cooked mung beans to the pan with the onion mixture.
7.Add in the coconut milk, soy sauce, and chard leaves. Mix well and let it simmer for 10 minutes.
8.Season with salt as desired and serve.
