Ingredients

2 -3 lbs red snapper , whole fish
4 tablespoons vegetable oil
1 tablespoon salt
1/4 teaspoon ground pepper
2 tablespoons soy sauce
1/2 cup apple cider vinegar or 1/2 cup white vinegar
1/4 water
1/2 cup brown sugar
1 large chopped onion
6 tablespoons minced garlic
1/2 cup ginger , julienned
1/2 cup carrot , julienned
1/2 cup red bell pepper
1/2 cup scallion , julienned ( spring onions )
1 tablespoon sifted flour

Instructions

1.Clean and season the fish with salt and pepper.
2.Heat 4 tablespoons of vegetable oil in a frying pan over medium heat.
3.Fry the fish until both sides are golden brown.
4.In the same pan, sauté the garlic and onion until the onion becomes translucent.
5.Add ginger, carrot, bell pepper, and scallion to the pan and stir fry.
6.Mix soy sauce, vinegar, water, and brown sugar in a bowl and pour the mixture into the pan.
7.Simmer for 5 minutes until the sauce thickens, stirring occasionally.
8.Mix the sifted flour with a tablespoon of water and add it to the pan. Stir to combine.
9.Serve the fish with the vegetable mixture on top and drizzle with the sweet and sour sauce.
