Ingredients

1/2 lb stewing beef , to make a meatier dish ( optional )
1 1/2 teaspoons salt
2 tablespoons cooking oil
2 cloves garlic , minced
1 medium onion , sliced
1/2 cup achute water ( optional )
3 tablespoons peanut butter
2 tablespoons toasted powdered rice ( optional ) or 2 tablespoons toasted mochiko sweet rice flour ( optional )
1/2 lb green beans
1 medium eggplant , cut into 8 pieces

Instructions

1.Boil the pork hocks or oxtails in a large pot with salt and enough water to cover the meat. Simmer for 2-3 hours or until the meat is tender.

3.Add the achute water, peanut butter, and toasted rice powder or toasted mochiko sweet rice flour into the sautéed garlic and onion mixture. Mix well until the peanut butter is completely melted.
4.Once the meat is tender, add the peanut sauce to the pot and stir well.
5.Add the green beans and eggplant to the pot, and cook until the vegetables are tender and the sauce has thickened. Serve hot with rice.
