3 garlic cloves , crushed
2 laurel leaves ( bay leaves )
1 teaspoon peppercorns or 1/2 teaspoon black pepper
salt
water , for boiling
oil ( for frying )
3 tablespoons soy sauce
5 tablespoons vinegar
1 shallots or 1 small onion , minced
1 garlic clove , minced
chili pepper ( optional )

Instructions

1.In a deep pot, combine the pork belly, garlic, bay leaves, peppercorns, salt, and enough water to cover the meat.

3.Lower the heat, cover and simmer for 45 minutes.
4.Remove the pork belly from the pot and let it cool down.
5.In a saucepan, whisk together soy sauce, vinegar, shallots, garlic, and chili pepper.
6.Cut the cooled pork belly into pieces, around 1-inch thick.
7.Heat the oil in a pan over medium heat, add the pork belly and fry until crispy and golden brown.
8.Transfer the pork belly to a plate lined with paper towels, drizzle with the sauce mixture and serve.
