Ingredients

4 scallions
1 large fresh gingerroot , unpeeled
2 cups corn oil
1/3 cup dried chili pepper flakes
1/2 cup soy sauce
3 tablespoons chili hot pepper oil
1 lb pork or chicken , cut into small pea sized pieces
3 tablespoons sesame oil
1 cup onion , chopped
2 garlic cloves , chopped finely
3 tablespoons soy sauce
3 tablespoons hoisin sauce
3 tablespoons oyster sauce
1/2 cup chicken stock
3 tablespoons sugar , or
3 tablespoons brown sugar
1 tablespoon shaoxing wine or dry sherry
1/2 teaspoon black pepper , ground
1 tablespoon cornstarch , plus
1 teaspoon cornstarch
4 hard-boiled eggs , cut into small cubes
1/4 ounce active dry yeast
1 1/4 cups tepid water
6 cups all-purpose flour
1/3 cup sugar
1/2 teaspoon salt
3 tablespoons lard , softened at room temperature
1/2 cup milk
2 teaspoons baking powder
Siopao is a type of dim sum or dumpling that originated in China, but is popular in many other Asian countries such as the Philippines. The Pinoy version is a meat-filled snack which is usually eaten on the go. The dough is soft and fluffy while the filling is savory and can be made from different types of proteins such as pork or chicken. It can be purchased from street vendors or made at home in a steamer.

Instructions

1.In a wok heat the oil on high heat, add the scallions and ginger and fry for 1 minute.
2.Reduce heat to medium, add in the soy sauce, dried chili pepper flakes and chili hot pepper oil.
3.Add in the diced pork or chicken and stir-fry until lightly browned, about 6 minutes.
4.Add in the sesame oil, onion, garlic, hoisin sauce, oyster sauce, chicken stock, sugar or brown sugar, shaoxing wine or dry sherry, and black pepper.
5.Stir well and cook for a further 5 minutes.
6.Dissolve the yeast in warm water and add the flour, sugar, salt and 3 tablespoons of the lard in a mixing bowl.
7.Knead the dough for about 10 minutes, then let it rest in a warm place for 1 hour.
8.Cut the dough into small pieces and roll into circles.
9.Fill each circle with the sauce mixture and a few cubes of hard-boiled egg.
10.Pinch the top of the circle to seal the bun up and place in a steamer lined with baking paper.
11.Let the steamer sit for a few minutes until it comes to a boil, then place in the oven at 350°F for 15 minutes.
12.Remove from the oven and enjoy!
