Ingredients

8 egg whites , about a cup
1/2 teaspoon cream of tartar
1/4 cup white sugar , for the egg whites
1 3/4 cups cake flour
1 tablespoon baking powder
1 teaspoon salt
8 egg yolks
1/2 cup white sugar , for egg yolks
1/4 cup corn oil
1/4 cup water
1/4 cup calamansi juice or 1/4 cup lemon juice
1 teaspoon vanilla extract
1/2 cup unsalted butter , melted to brush cake
1/2 cup grated cheddar cheese , to sprinkle on top of cake
1/8 cup white sugar , to sprinkle on top of cake

Instructions

1.Preheat oven to 350°F/180°C.
2.In a mixing bowl beat the egg whites and cream of tartar until stiff peaks form. Gradually add the 1/4 cup of white sugar while beating and continue to beat until the mixture becomes glossy. Set this aside.
3.Sift together the cake flour, baking powder, and salt. Set this aside.
4.In a separate mixing bowl beat the egg yolks until they are light in color. Gradually add the remaining 1/2 cup of white sugar while beating. Slowly pour in the corn oil and mix until smooth. Add in the water, calamansi juice or lemon juice, and vanilla extract. Mix until well combined.
5.Gradually add in the cake flour mixture that you had set aside earlier. Mix until smooth.
6.Fold in the egg white mixture you set aside in step 2. Mix gently using a spatula until well combined.
7.Bake the mixture for 25 to 30 minutes or until done. Insert a toothpick in the middle to check if it comes out clean.
8.Remove from the oven and brush the top of the cake with melted butter. Add the grated cheddar cheese and 1/8 cup of white sugar on top of the cake.
9.Return the mixture to the oven and broil for 2 to 3 minutes or until the cheese melts.
10.Remove from the oven and let it cool completely. Serve and enjoy!
