Ingredients

1/2 lb ground beef
2 tablespoons butter
1 tablespoon garlic , minced
1/2 tablespoon ground ginger
3 green onions , chopped
1/8 cup red onion , minced
1 lb fresh mushrooms , any kind you feel like
2 cups cabbage , shredded and chopped
1 large carrot , grated
2 tablespoons soy sauce
2 tablespoons cilantro leaves , chopped
1 tablespoon fresh parsley leaves , chopped
1/4 teaspoon season salt
1/8 teaspoon white pepper
1 package egg roll wraps
1 egg , beaten ( even though just water works fine to seal the wraps )
vegetable oil , for frying

Instructions

1.Brown the ground beef in a skillet over medium heat and set aside.
2.Melt the butter in a large wok or skillet over medium-high heat.
3.Add garlic, green onions, red onion, and ginger to the skillet and cook for 1 minute.
4.Add the mushrooms, cabbage, and carrot to the skillet and cook for 5 minutes.
5.Add the cooked beef back to the skillet and stir in soy sauce, cilantro, parsley, season salt, and white pepper.
6.Remove from heat and let the filling cool.
7.Lay the egg roll wrappers out on a flat surface and start filling them with the mixture, rolling them up as you go.
8.Use the beaten egg or water to seal the edge of the rolls.
9.Heat the vegetable oil in a deep fryer or a large skillet to 375 degrees F.
10.Fry the spring rolls until golden brown, about 2-3 minutes per side. Drain on paper towels and serve with your favorite dipping sauce. Enjoy!
