Ingredients

1 large eggplant
1/2 cup all-purpose flour
3/4 cup panko breadcrumbs
3 tablespoons grated parmesan cheese
1/4 cup za'atar spice mix , spice blend
1 teaspoon kosher salt
1 pinch cayenne pepper
2 large eggs
flaky salt , to finish ( like Maldon )
1/2 cup tahini
1 tablespoon sour cream
2 tablespoons lemon juice
1 teaspoon apple cider vinegar
1 tablespoon tamari ( or soy sauce )
1/4 teaspoon garlic powder
1 teaspoon za'atar spice mix , spice blend
2 -4 tablespoons water , to thin

Instructions

1.Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius) and line a baking sheet with parchment paper.
2.Cut the eggplant into thin, fry-sized strips.
3.In a shallow dish, combine the flour, panko breadcrumbs, grated parmesan cheese, za'atar spice mix, kosher salt, and cayenne pepper.
4.In another shallow dish, beat the eggs.
5.Dip each eggplant strip in the egg mixture, then coat it in the breadcrumb mixture, pressing the mixture onto the eggplant to help it adhere.
6.Place the coated eggplant strips on the prepared baking sheet and sprinkle with flaky salt.
7.Bake for 20-25 minutes, or until golden brown and crispy.
8.While the eggplant fries are baking, prepare the lemon tahini dip. In a small bowl, whisk together the tahini, sour cream, lemon juice, apple cider vinegar, tamari or soy sauce, garlic powder, za'atar spice mix, and enough water to achieve a dip-like consistency.
9.Serve the baked za'atar eggplant fries hot with the lemon tahini dip on the side.
