Ingredients

1 cup sugar
1/4 cup water
1/4 cup pomegranate syrup ( juice is okay too )
1/4 cup fresh orange juice ( no pulp )
1 orange , zest of
1 cinnamon stick
1 cup honey
1/4 cup water ( reserve )
1 package phyllo dough , thawed per package instructions
1 cup butter , that has been clarified ( See below )
10 ounces roasted & salted pistachios ( or plain )
2 ounces pecans
4 ounces almonds
2 teaspoons cinnamon
1 tablespoon sugar
1 dash ground cloves
1/2 teaspoon cayenne pepper ( optional )

Instructions

1.In a saucepan, combine 1 cup sugar, 1/4 cup water, 1/4 cup pomegranate syrup, 1/4 cup fresh orange juice, zest of 1 orange, and 1 cinnamon stick.
2.Bring to a boil over medium-high heat, stirring until sugar dissolves.
3.Reduce heat to low and simmer for 10 minutes, stirring occasionally.
4.Remove from heat and discard cinnamon stick.
5.Stir in honey and reserved 1/4 cup water.
6.Preheat the oven to 350°F.
7.In a food processor, pulse the pistachios, pecans, almonds, 2 teaspoons cinnamon, 1 tablespoon sugar, and dash of ground cloves until coarsely chopped.
8.Melt the clarified butter and brush a 9 x 13 inch baking dish.
9.Unroll phyllo dough and cut to fit the dish.
10.Cover with a damp towel to keep from drying out.
11.Layer 8 sheets of phyllo dough in the bottom of dish, brushing each layer lightly with butter.
12.Sprinkle 1/3 of nut mixture over phyllo dough.
13.Repeat layers twice.
14.Top with 8 layers of phyllo dough, brushing each layer lightly with butter.
15.Brush top with butter and sprinkle with remaining nut mixture.
16.Using a sharp knife, cut the top layers of phyllo dough into diamonds.
17.Bake until golden brown and crisp, about 50 minutes.
18.Pour honey syrup over baklava and let cool to room temperature before serving.
