Ingredients

3 lbs wheat , freekeh
2 whole chickens , cut into serving pieces
2 onions
2 tablespoons tomato paste
4 tablespoons olive oil
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1 cup almonds , slivered and toasted
1 cup pine nuts , toasted
Freekeh is a traditional Arab dish made from roasted green wheat. The wheat is harvested while still young and green, then roasted, which gives it a smoky flavor. Instructions

1.Rinse and drain the freekeh twice in cold water and let it soak in cold water for 30 minutes.
2.Heat 2 tablespoons of olive oil in a pot. Add the onion and cook for a few minutes until it becomes a golden brown color.
3.Add the chicken to the pot and cook for 10 minutes to brown the chicken pieces.
4.Add the tomato paste, salt, pepper and paprika to the pot and mix.
5.Pour in 8 cups of water and let it come to a boil. Skim off any impurities whenever necessary.
6.Drain the freekeh and add it to the pot. Leave the pot to simmer for 1 hour, until the wheat is tender and the flavors are blended.
7.In another pan, heat the remaining olive oil and brown almonds and pine nuts together.
8.Serve the freekeh in a dish and sprinkle the slivered and toasted almonds and pine nuts on top.
