2 large tomatoes , peeled , seeded & diced
2 cucumbers , peeled , seeded & diced
3 small green peppers or 3 small wax peppers
6 radishes , thinly sliced ( optional )
3 green onions ( white part only sliced ) or 1 white onion , sliced into rings
1/2 cup flat-leaf Italian parsley , finely chopped
6 tablespoons lemon juice
1/4 cup olive oil
salt
pepper
Choban Salatasi (Turkish 'Shepherd's' Salad) is a simple yet delicious salad that's perfect for any occasion. Instructions

1.In a large bowl, combine the diced tomatoes, cucumbers, green peppers (or wax peppers), sliced radishes (optional), and sliced green onions (or white onion)
2.In a separate bowl, whisk together lemon juice, olive oil, salt and pepper.
3.Pour the dressing over the vegetables and toss gently to combine.
4.Sprinkle chopped parsley on top and serve chilled.
