Ingredients

1 medium onion , diced ( you can use more if you like , I do )
2 tablespoons olive oil
1 cup brown rice ( I use Uncle Ben 's )
1 cup brown lentils
4 cups water ( approximately )
1/2 teaspoon salt ( you can use more or less )
Mujadara, or Lebanese lentils and rice, is a popular and beloved comfort food in Lebanon and the Middle East. Instructions

1.Rinse lentils and rice and place them in a pot with 4 cups of water and 1/2 tsp salt.
2.Bring to boil then reduce heat and let it simmer for about 30-40 mins, until both lentils and rice are cooked.
3.While lentils and rice are cooking, dice the onion and fry it in a pan with olive oil over medium heat until caramelized.
4.Once the lentils and rice are cooked, add the caramelized onions and olive oil from the pan to the pot and stir everything together. Serve hot!
