Ingredients

1 bunch dill
1/2 cup cake flour ( or all-purpose , just use a couple teaspoons less )
salt , white pepper
1 cup water
3 large eggs
1 medium white onions , chopped fine and fried in clarified butter or 1 medium oil , till translucent
olive oil or clarified butter , as needed
3 cups carrots , chopped like coins preferably
2 tablespoons brown sugar
1 cup yogurt
1 teaspoon turmeric
1 mashed garlic clove ( for the dressing )
2 -3 green onions ( leaves only , green part )

Instructions

1.Wash and dry the dill, then chop the dill as finely as possible. Mix the flour, salt, and white pepper in a bowl, then whisk in the water and eggs until the batter is completely smooth.
2.Add the chopped fried onions and dill to the batter and stir to combine.
3.Heat some olive oil or clarified butter in a nonstick skillet over medium heat, then pour in enough batter to form a small pancake. Cook until the bottom is lightly browned and the surface is slightly dry, about 2 minutes.
4.Flip the pancake over and cook for another minute.
5.Repeat with the remaining batter, adding more olive oil or clarified butter as needed. For the carrot coins, melt the brown sugar in a skillet over medium heat.
6.Add the chopped carrots and sauté until tender, about 10 minutes. Whisk together the yogurt, turmeric, and garlic in a small bowl.
7.Arrange the carrot coins and dill pouches on a plate, then pour the yogurt dressing over the top, garnish with green onions leaves.
