Ingredients

1 1/2 lbs chicken breasts , boneless skinless or
1 1/2 lbs beef
1/4 cup vinegar
1 cup Greek yogurt
2 garlic cloves , crushed
1 teaspoon pepper
1/2 teaspoon salt
3 cardamom pods
1 tablespoon allspice
1/3 cup lemon juice
5 garlic cloves
1 egg white
1 cup canola oil or 1 cup sunflower oil
1/3 cup lemon juice
1 pinch salt
2 tablespoons ice water
3 dill pickle spears
1/2 onion
1 tomatoes
2 teaspoons sumac ( optional )
6 pieces pita bread or 6 pieces flat bread
Shawarma is a popular Middle Eastern delicacy consisting of spiced meat, usually lamb, beef, or chicken, cooked on a spit and served with pita bread, vegetables, and sauces. It is a staple street food in countries like Turkey, Israel, and Lebanon. Today's recipe features Shawarma with Toum Garlic Sauce, a modern twist on the classic dish that is both delicious and simple to make. Toum sauce, made with garlic, lemon juice, egg white, salt, and oil, gives the Shawarma a subtle yet tangy flavor that is sure to tantalize your taste buds. Instructions

1.Combine the marination ingredients in a large bowl. Add the Chicken or Beef and mix well. Cover and refrigerate for 1-2 hours.
2.Preheat oven to 400 degrees F.
3.Line a baking tray with Aluminum foil and lightly grease it. Spread the marinated Chicken or Beef on the prepared tray and bake for 25-30 minutes or until cooked through.
4.Whilst the meat is cooking, prepare the Toum Sauce. In a blender, combine 3 Garlic cloves, Egg White, salt, lemon juice and ice water. Blend until smooth and airy. In a slow, steady stream, add the oil to the blender whilst blending continuously until the sauce thickens.
5.Once meat is cooked, let it rest for 5-10 minutes before slicing it thinly.
6.Toast the Pita bread or Flatbread and prepare the toppings.
7.Layer the Shawarma with Toum sauce, pickles, onion, tomato and Sumac on the pita bread. Roll, secure with toothpicks and serve immediately.
