2 cups rendered butter
1 cup flour
1/2 cup oil or 1/2 cup Crisco shortening
3 tablespoons sugar
1/4 teaspoon Mahlab , ground ( black cherry kernels )
1/4 teaspoon gum arabic , ground ( miska )
1/2 teaspoon salt
0.5 package yeast
3/4 cup water
3/4 cup milk
3 lbs dates
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 tablespoon rendered butter
Ka'ak Bi Ajwa is a Middle Eastern pastry popular in Palestine and other Arab countries. Instructions

1.In a large mixing bowl, combine the farina, flour, sugar, mahlab, gum arabic, and salt.
2.Melt the rendered butter and Crisco shortening or oil together and gradually pour it over the dry ingredients. Combine until the mixture resembles fine breadcrumbs.
3.In a small bowl, mix the yeast with warm water and add to the flour and butter mixture. Add the milk and mix until everything is fully combined.
4.Knead the dough well for 5 to 10 minutes until pliable and smooth. Cover the dough and let it rest for 1 hour.
5.Preheat the oven to 350°F. Pit and chop the dates finely, add cinnamon, nutmeg, and 1 Tbsp melted butter and mix well.
6.Roll the dough into small balls the size of a walnut, make a small well in the center, and fill with the date mixture. Form each ball into a ring shape and place them on a baking sheet.
7.Bake the cookies for 15 to 20 minutes or until golden brown.
