Ingredients

1 large cauliflower
1 1/2 lbs boneless beef cubes ( or lamb )
1 large onion
2 cups rice
1/2 teaspoon allspice
1/2 teaspoon pepper
1 dash garlic powder
2 tablespoons butter
4 teaspoons salt
3 1/2 cups broth or 3 1/2 cups water
1/8 teaspoon saffron ( optional )
2 tablespoons pine nuts ( optional )
Makloubeh - Cauliflower is a popular Middle Eastern dish and the word Makloubeh translates to "Upside Down" in Arabic. It is a hearty meal that is typically made with layers of meat, vegetables, and rice. In this recipe, we use cauliflower as our vegetable of choice, but you can also use eggplant or potatoes. It is a perfect dish for feeding a crowd as it can easily be scaled up or down to your desired serving size. The name of the dish comes from the traditional way it is served, which is by flipping the pot upside down onto a serving platter so that the rice is on the bottom and the meat and vegetables are on top. This presents a beautiful and impressive presentation for your guests.

Instructions

1.Rinse the rice and soak it in warm water for 10 minutes. Drain and set aside.
2.In a large pot, cook the beef cubes over medium heat until browned on all sides. Remove and set aside.
3.In the same pot, add the chopped onion and sauté until softened.
4.Add in the cauliflower florets and sauté until lightly browned.
5.Sprinkle the allspice, pepper, garlic powder, and 2 teaspoons of salt over the cauliflower. Mix well.
6.Add the browned beef cubes over the cauliflower and sprinkle with 2 more teaspoons of salt.
7.Pour the broth or water over the mixture and bring to a boil.
8.Cover the pot with a lid and simmer for 10 minutes.
9.Add the soaked rice and 2 tablespoons of butter, making sure the rice is submerged in the liquid.
10.Cover the pot again and simmer for an additional 20 minutes, or until the rice is fully cooked. Optional: Sprinkle saffron and pine nuts on top before serving.

PROS

Makloubeh – Cauliflower is a one-pot meal that is easy to make and packed with flavor.
It is also very versatile and can be adjusted to use different proteins or vegetables.

CONS

This dish can be high in sodium if too much salt is added.
The use of white rice instead of brown rice may also make it less nutritious.
