Ingredients

1 box shredded phyllo dough
8 ounces butter , unsalted
1 1/2 lbs whole milk ricotta cheese
1/2 lb fresh goat cheese or 1/2 lb light cream cheese
1 cup sugar
1 cup water
2 tablespoons fresh lemon juice
1 teaspoon rose water ( optional )
Kanafeh or Kunafa or Kanafi is a traditional Middle Eastern dessert that has grown in popularity around the world. Instructions

1.Preheat the oven to 350°F (175°C).
2.In a large bowl, mix together the shredded phyllo dough and melted unsalted butter until well combined.
3.Separate the mixture in half and evenly spread one half into the base of a 9x13 inch baking pan.
4.In a separate bowl, combine the whole milk ricotta cheese, fresh goat cheese or light cream cheese, and 1/4 cup of the sugar. Mix until well combined and spread over the phyllo mixture in the pan.
5.Layer the remaining half of the phyllo mixture on top of the cheese mixture.
6.Place the pan in the oven and bake for 30-35 minutes, or until golden brown.
7.While the kanafeh is baking, prepare the syrup. In a saucepan, combine the remaining 3/4 cup of sugar, water, lemon juice, and rose water (optional). Bring to a boil and simmer for 5-7 minutes, stirring occasionally.
8.Once the kanafeh is finished baking, remove it from the oven and pour the prepared syrup over the top while it is still hot.
9.Allow the kanafeh to cool for at least 30 minutes before serving. Enjoy!
