Ingredients

vermicelli mung bean noodles ( These are made out of green mung bean , and are dry white noodles you will find in the asian aisle at )
5 cups warm water
2 -3 lbs ground pork
1 lb shrimp
4 medium carrots
1/2 medium onion
1 tablespoon black pepper
1 tablespoon sugar
1 teaspoon salt
3 eggs
egg roll wrap ( enough for approx 50 egg rolls )
3 cups vegetable oil
Cambodian egg rolls are a popular snack in Cambodian cuisine. Unlike egg rolls in other cuisines, Cambodian egg rolls are made with a filling that contains a variety of vegetables and meat, without cabbage. The filling of these egg rolls is packed with flavor, and the vermicelli noodles give it a unique texture. The egg roll wrapper is then deep-fried to give it a crispy exterior. Instructions

1.Soak the vermicelli in the warm water for 10-15 minutes until they soften. Drain and chop coarsely.
2.Combine the ground pork, shrimp, carrots, onions, black pepper, sugar, and salt in a bowl and mix well. Beat the eggs in a separate bowl and add them to the meat mixture. Finally, add the chopped vermicelli to the mix.
3.Lay an egg roll wrap on a work surface and place a heaping tablespoon of filling in the center of the wrap. Roll up the wrap around the filling, tucking in the sides as you go. When the wrap is completely rolled, dip your finger in a little water and moisten the edge of the wrap to seal it closed.
4.Heat the vegetable oil in a large skillet over medium-high heat. Fry the egg rolls in batches until they are golden brown and crispy. Drain on paper towels and serve hot.
