14 ounces pumpkin , peeled and cubed
14 ounces sweet potatoes , peeled and cubed
2 tablespoons sugar
1 tablespoon vanilla extract
1/4 teaspoon cinnamon ( not traditionally used ) ( optional )
1 can coconut milk
2 1/2 cups water
1/2 cup sago
1/3 cup sugar
1 tablespoon vanilla extract ( or 1 vanilla bean , sliced open , remove before serving if using )
chopped peanuts , to garnish

Instructions

1.In a large pot, combine the pumpkin, sweet potato, 2 tablespoons of sugar, vanilla extract, cinnamon (optional), coconut milk and water.
2.Bring the mixture to a boil and let it simmer for 20 minutes or until the pumpkin and sweet potato are tender.
3.In a separate pot, cook the sago according to the package instructions.
4.Once cooked, add the sago, 1/3 cup sugar and 1 tablespoon of vanilla extract or the scraped out vanilla bean to the pumpkin and sweet potato mixture.
5.Let it simmer for another 10 minutes, stirring occasionally.
6.Turn off the heat and let the mixture cool down to room temperature.
7.Once cooled, transfer the mixture to a blender or food processor and blend until smooth.
8.Pour the mixture into parfait glasses and garnish with chopped peanuts.
