Ingredients

3/4 cup mango , finely diced
1/2 cup papaya , finely diced

1 inch ginger , peeled and thinly sliced
1 tablespoon ot chili sauce
1 tablespoon curry powder
2 tablespoons peanut oil
1 tablespoon soy sauce
1 lime , juice of
4 chicken breast halves , boneless and skin ON

Instructions

1.Combine mango, papaya, red bell pepper, seedless cucumber, red onion, mint, jalapeno, lime juice, and salt in a bowl and set aside.
2.Cut off the woody tops of the lemongrass and remove any dry outer leaves. Cut the stalks in half and use a meat mallet to pound the lemongrass to release its flavor.
3.In a small bowl, combine ginger, hot chili sauce, curry powder, peanut oil, soy sauce, and lime juice.
4.Season chicken breasts with salt and pepper and brush the spice mixture over both sides.
5.Grill chicken breasts over medium-high heat for about 4 minutes per side or until cooked through.
6.Serve chicken breasts with tropical salsa.
