Ingredients

2 tablespoons fish sauce
3 garlic cloves , crushed
1 tablespoon curry powder
1/2 teaspoon salt
2 tablespoons sugar
1 1/2 teaspoons sugar
1 1/2 lbs boneless skinless chicken breasts ( or thighs )
3 tablespoons water
3 tablespoons cooking oil
2 fresh lemongrass , stalks tender inner white bulbs only , minced
1 large shallot , thinly sliced
3 chilies , seeded and minced
1 scallion , for garnishing

Instructions

1.In a mixing bowl, add fish sauce, garlic, curry powder, salt, sugar, and mix well.

3.In a large skillet, heat cooking oil over medium-high heat. Add lemongrass, shallot, and chilies, stir fry for 30 seconds.
4.Add chicken and cook for 8-10 minutes until cooked through.
5.Add 3 tablespoons of water and let it cook for an additional 3 minutes.
6.Garnish with scallion. Serve with steamed rice or noodles.
